From my kitchen : Traditional butter cake

Yesterday was another free day for me. I was having a term break for this weekend..meaning, I do not have any classes on this weekend.
My baking mood was on..so after lunch, I got ready all the ingredients needed and started baking "traditional butter cake." Actually it was my second time baking this cake. Few weeks ago, I did bake it and I found the cake is moist and although keep for 2-3 days, it still soft and moist.

After busy in the kitchen for an hour.....at last, my butter cake is ready. I topped up lot of mixed fruits on top the cake.I also added some raisins in between the batter,but it seem the raisins are all go to the bottom of the cake.

















Ingredients:
250gr   butter
4          eggs (separate egg yolk and egg white)
50 gr + 150 gr   caster sugar
200 gr  self raising flour
60 ml    fresh milk
1 tsp     vanilla essence

Method:
1. Beat egg white until soft peaks, then add 50gr caster sugar, beat till stiff.
2. In another bowl, beat butter & 150gr caster sugar until pale. Add vanilla essence ,followed by egg yolk one at a time.
3. Pour in half of the flour,mix on low speed.
4. Pour in the milk ( in 2 additions ) and lastly mix the balance of the flour.
5. Put in 1/2 of egg white into the above batter,mix well.
6. Using a spatula, pour in the balance of egg white and mix them well.
7. Preheat the oven, bake the cake for about 45 mins.

From my kitchen : Steamed Egg Cake

Yesterday night was a free night for me, we have an early dinner and I have "extra time" before watching the Spore Drama on AEC channel at 8.30pm.
My hand felt itchy and I started to find some cake recipe that I have in my recipe book.
Since I have all the ingredients needed for Steamed Egg Cake, I got myself busy in the kitchen for half an hour. It is a simple cake  that my family love it so much.

After beating the ingredients and steaming for half an hour (in high heat).....Here is the cake for our breakfast this morning...






We finished up this cake in  an hour time and I may consider to make one again later in the afternoon since I have extra Sprite(soft drink) in my fridge. Yes... Soft drink like 100 plus or Sprite or 7 Up is one of the ingredient to make this cake.

Cheddar CheeseCake

Cheesecake is always my favourite cake. The other day when I was doing my grocery shopping, I grabbed a pack of cheddar cheese for Ryan. Ryan love to eat cheese and sometimes I will just make a simple cheese sandwich for his tea time at school.
I was wondering whether can I make a cheesecake using this Cheddar Cheese.....how does it taste like??

Then I started to find some recipe online on cheddar cheesecake.At last, I managed to find one good recipe from Nasi Lemak Lover's blog.

From my own experience, preparation of this cake is more time consuming because you need to beat the egg white and egg yolk separately. And it is my first experience baking a cake in "water bath" method.

And the result........

From my Kitchen..... Lime Cheesecake

Although I have been quite busy lately, I tried to squeeze some times to do baking in my kitchen. Of course, I will opt for something simple to make and it does not consume lot of my time in preparation.
My hubby passed me this "Non-baked Lime Cheesecake" recipe the other day...I started to get ready all the ingredients and get my kitchen project done within an hour.

Since it is a  non-baked cheesecake,  I have to wait for overnight to get the result.....the next morning, I quickly opened my fridge and looked at the cheesecake, bit soft on top...so I never touch and let it be inside the fridge for a few more hours.
Only when I came back home in the afternoon, I cut a slice and gave it a try, the lime flavour was not strong enough (next time I should more lime for flavouring). Overall, I should say this cake taste good.





Chinese New Year is coming soon and now I am starting to bake CNY cookies.As for the cake, I still considering what cake to bake. Anyone mind to share with me some simple recipe for CNY cake?...

My first try ~ Crystal skin MoonCake

After been missing for a week, at last I am back to blogging world. Last week was a busy week for me because my mom & sis came to visit me. We were having fun time together and now they are back to Medan ...miss them so much, even Ryan cried after coming back from school last Friday when he could not find his grandma and ih ih...poor boy, lucky after a while he was doing fine.

On their visit, I managed to make my first mooncake to let my mom & sis try. For the filling, my kind MIL help me to cook the pandan paste,so I just need to prepare the skin for the mooncake (crystal skin). I would say the outcome is not bad....the skin is just nice,not too soft and not too hard.
As for my mom & sis, they were getting excited to try this crystal skin mooncake on their own when they are back to Medan, they have brought all the ingredients needed for this mooncake.

Lemon Sponge Cake

Last Sunday, after been to Hoover Memorial Park and Jubilee Park,I was in the mood to bake a cake......I bought a pack of sponge cake mix the other day during my grocery shopping. It was pretty simple to make....just add water/milk n melted butter n egg into the sponge mix,beat them well and baked for about 40 mins....... Here it is.....My Lemon Sponge Cake.....













Actually I added some red cherries on top of the cake,but most of them sink to the bottom of the cake....why....? Can anyOne give me some advices on it?

Banana Muffin

I have some bananas left in my kitchen the other day and think of what should I do with them since they are ripe and we can't finish eating them in a day. Searching for some cake recipes, at last, I got this simple recipe " banana muffin". Since my kitchen has all the ingredients needed...my baking project started soon....
After busying in the kitchen for an hour.....a nice smell come out from the oven........smell good,but how is the taste like. Of course, I hope it taste good too.














Letting them cool before trying it.....Yes, it taste GooD.

Sponge Cake

Today is my second attempt making sponge cake. I always wanted to bake a cake,but no oven at home. So my lovely hubby redeemed his credit card points with ELBA electric oven for me to do my baking project. I received the oven less than a week time.
Since Ryan is having his long school holiday, I have more free time at home to do my baking project. I started look for simple cake recipe to try out.

While doing my grocery shopping last week, I spotted "sponge cake mix" at the supermarket rack. Looks easy and simple to make, grabbed one pack and tried it out last week. The sponge cake taste great and spongy. Definitely a good try !!
Since I have a Giant blackcurrent jam in the fridge, I cut half the sponge cake and applied the jam in between,it taste good. Three of us walloped the whole cake in a day.

While writing this post, I am baking the 2nd sponge cake. I need to bake 3x to finish up the batter.


Baking in process....

The sponge cake is ready......hot from the oven.


Here is the "sponge cake" recipe for sharing:

500g sponge mix/optima
500g eggs
120g water/milk (I used water)
120g oil/butter/margarine (I used butter-melted)

1. Melted the butter and leave it to cool.
2. Mix the sponge mix with egg,beat with slow speed for 1 min. Change to high speed whip till the mixture is fluffy, slowly add in the milk/water and beat for another 4 mins.
3. Fold in the melted butter slowly with slow speed to complete the mixing.
4. Preheat the oven for about 10 mins.
5. Bake with medium heat for 45 mins.

Banana Cake (II)

Lastnight, I make the second attempt for baked banana cake. With the 4 bananas left in the kitchen, I got ready all the ingredients needed after finishing my dinner...then start my baking project.
This round, I did not mashed the bananas,instead, I sliced them in pieces,but I did beat them in the batter. I thought of adding perisa banana into the cake,but unfortunately,the perisa already expired.

I am very satisfied with the outcome ..it comes out like what I am expecting.
This morning,this banana cake is for my breakfast,my hubby also tried it out and said "quite nice"...even Ryan also like it and he did eat 1 big piece during his lunch.

Plan for another baking session.....probably this weekend since Ryan will have no class on Saturday and Sunday.

Happy Birthday, Ryan ...

The clock just striked 12 midnight and it is 1st Feb 2011.... Yeah....Ryan is officially 4 years old today and while I am writing this post, he is just having his night sleep. Since there is no school for this whole week, I allow him play bit late and let him enjoy his night time.
So any birthday celebration for this year?.... Just a simple one....will cook few dishes for dinner followed by cake cutting.
Since last month, Ryan has told me that he want to have birthday cake with spiderman and a car on top of the cake. So I ordered the cake exactly like what he wants.I will collect the birthday cake tomorrow afternoon from the bakery.
As for the birthday present, we bought him a blocks and Ryan is so happy. He can create all sort of cars,ships,etc....with his new toy.
