New Dish - Belacan Miding



Have you ever hear of Paku Miding ( a kind of vegetable )?? Actually I never eat this vege till I married my hubby and move back to Sibu. One day, MIL cooked this vege, I found it so weird...looks scary to me. But then I saw hubby and MIL keep eating, so let's give a try. At last I fall in love with this paku miding.

It is nice to cook with Belacan, add some chillies and the taste is yummy. This morning I went to wet market and I saw this Paku Miding vege. Bought some and tonight I cooked it as one of the dishes for dinner.

And here is a recipe for Belacan Miding :-

Ingredients

-About 500 grammes of paku miding (pluck tips only)

-About 20 to 40 grammes of belacan

-5 cloves garlic

-5 cloves shallots

-About 30 grammes of dried prawns (pre-soaked for 15 minutes)

-5 red chillies (remove seed if you prefer it less spicy)

-3 tablespoons warm water

- 3 tablespoons cooking oil

Method

1.Pound or blend belacan, garlic, shallots, dried prawns and red chillies.

2.Heat 2 tablespoons oil in wok and saute belacan mix till aromatic (approximately 1 minute). Add another tablespoon of oil if belacan mix too dry or begin to burn.

3.Add miding to belacan mix and stir-fry briskly. Add water and continue stir frying till water almost dried up (but miding is moist).

NB: Can also cook this paku miding with beehoon. Soak the meehoon before frying together with paku miding.

This is call Paku Miding, now Only I know.
I love to eat this vege, but seldom see it at market. Some ppl said it has weird texture when chewing it. It is like "liat" (in Bahasa Melayu)

My mom also cooked it with sambal. For me, the more spicy it is, the more nicer it will be.

It can cooked with mee hoon? Taste nice?

I have been searching for the name of this vege..then onli tonight I managed to find it. I also like to cook it in spicy way(spicy food lover).
I tried to cook this vege with beehoon and it taste nice. Giv a try nextime!!
At sibu, it is easily can buy tis vege from wet market.

Oh .... I love this vege too but also don't know what's the name of it. What does you MIL call it in sibu?

hehehe yes i know. i first ate this veg in Kuching ... quite hard to find in KL.

Caroline - I also having hard time finding the name of this vege...after searching high n low,at last I got it. At Sibu,they call it as MiLien(in foochow language). Normally hw u cook tis vege?

Littlelamb - I also read info from web that susah get tis vege in KL. At my place here, can easily get it at wet market n not expensive.

hahha ... i like tis vege .. yes , quite rare in kl ... i like it especially cook with the liquor (the type we use to eat during confinment) .. the taste even more original n taste good !!!

Jennifer - I nvr cooked this vege with the liquor(confinement used type). I believe the taste wil be great.
