From my Kitchen ... Peanut Butter Cookies

After I have done with the "German Cookies", I started to bake another batch of  "Peanut Butter Cookies". I got this recipe from my sister. And this year is my second time baking this cookies for Chinese New Year.

Let me share with everyone this simple recipe...

Ingredients :
250 gr peanut butter (I used LadyChoice brand)
200 gr icing sugar
400 gr plain flour
200 gr corn oil
1/2 tsp salt
1 tsp vanilla essence
1 egg yolk (for garnishing)

Method :
1. Mix all the ingredients: peanut butter, icing sugar,plain flour,salt and vanilla essence.
2. Add in corn oil and mixed well.
3. Make a round shape and apply egg yolk on top.
4. Pre-heat oven and bake for about 15 mins.

From my Kitchen .... German Cookies

Chinese New Year is coming soon... and since today is a Public Holiday, I make myself comfortable at home by baking CNY cookies. As usual , I always go for something simple and easy to make and today I am baking "German Cookies".

 












Let me share with you the recipe :

Ingredients :
A) 250 gr butter ( I used WestGold )
     80 gr   icing sugar
B) 250 gr potato flour
     100 gr plain flour ( I used BlueKey brand - superfine flour )

Methods :
1. Mix A together, stir in high speed till fluffy.
2. Add in B and mix well. It is advisable to keep the dough in the fridge for about 1-2 hours.
It will help to make the dough firm and easy to make the round shape.
3. Make into small round shape, press lightly with a fork.
4. Pre-heat the oven , bake the cookies for 170'c for about 15-20 mins.

Note : Never add flour to increase the hardness of the dough.

From my Kitchen..... Lime Cheesecake

Although I have been quite busy lately, I tried to squeeze some times to do baking in my kitchen. Of course, I will opt for something simple to make and it does not consume lot of my time in preparation.
My hubby passed me this "Non-baked Lime Cheesecake" recipe the other day...I started to get ready all the ingredients and get my kitchen project done within an hour.

Since it is a  non-baked cheesecake,  I have to wait for overnight to get the result.....the next morning, I quickly opened my fridge and looked at the cheesecake, bit soft on top...so I never touch and let it be inside the fridge for a few more hours.
Only when I came back home in the afternoon, I cut a slice and gave it a try, the lime flavour was not strong enough (next time I should more lime for flavouring). Overall, I should say this cake taste good.





Chinese New Year is coming soon and now I am starting to bake CNY cookies.As for the cake, I still considering what cake to bake. Anyone mind to share with me some simple recipe for CNY cake?...

Some gifts..


I have been pretty busy since I started to teach part-time at tuition centre. Weekdays I am busy with Ryan and weekends I am busy with my work. Saturday is never my "free-day" now. I have to work for the whole day and by the time I reached home,the clock has stroke 9.30pm.

Sorry for updating late.....this is another back dated post.

Dodol...a sweet food from Indonesia

This is another backdated post....

Have you ever heard about this food named DODOL. During my trip back to Medan last Nov, my mom passed me this sweet food Dodol to bring back to Sibu. Actually I don't really like dodol because I find it it too sweet for me. Since I have not been eating dodol for a very long time, I don't mind to have one with me.
For me, I fridged it overnight ,then only I ate it...at least it tasted better,not that sweet.
I let my hubby tested on it.....ehmmm, not bad. He loves the taste.

Welcome 2013........

First of all....I would like to wish all my friends " Happy Belated New Year".

This year is definitely a busy day for me as I started to teach tuition during weekends (fri,sat and sat) at one of the tuition centre.
After quitting from my last job more than 7 years ago,...now I am back to the working life again. Pretty tiring for me especially when I have to teach those small kids.Weekdays is my rest day and when come to weekends, I have to get myself ready for the "war" again.

As for Ryan, he is entering a new school for his K2, I am glad that he is enjoying his new school life and so far he is doing well there. But he needs to wake up earlier than last year and have to reach the school before 7.30am (lesson starts at 7.30am).

As for me, the most tiring day for me is Saturday because I have 3 classes on that day. By the time I finish my last class, the clock has stroke 9pm and by the time I reached home, it is about 9.30pm.
My students are mostly from Pri 1, Pri 2 and Pri 3. Some of them can read very well but some of them can't even read simple English words. I am putting my best effort to teach them and hope it will show an improvement in their English.

Our Day after x'mas

X'mas is over and school is back soon. Next year, Ryan will be at his new school and  we need to go for orientation next week to buy books,uniform,etc.
Next week will be a busy week for me...have to wake up early and back to my normal routine again.

Today I have the mood to cook my own version of "nasi ayam". Since I don't have chicken rice paste to cook the rice, I dished up my own version  for the rice. I added some ginger(smashed) and fried garlic and seasoning to the rice, it tasted not bad.
As for the chicken, I boiled it for 20 mins,then soak in ice cold water,then boiled again for another 10 mins. Pour some sesame oil  over the chicken...that is what we have for dinner tonight.















Ryan has been asking me when is x'mas day....and he really hope to receive a gift from Mr.Santa. To make him happy, I asked him to put a x'mas sock in the living room and left it overnight. And the next day....he saw his favo toy next to his sock...A Happy smile burst our from his face. He is so happy...and we get it fix soon in our bedroom.

Our dinner for Tonight

After coming back from Medan, I start my daily routines..doing housechores, cooking, etc...I really miss my sweet moments in Medan (no housechores & cooking at all .....everyday just relax,eat...relax, eat).

Tonight, I dished up a simple meal for 3 of us. I bought some ready pastes (curry paste,sate padang paste, satay paste) from the wet market in Medan and I cooked " satay pork " for our dinner.
I also dished up "chap chai" and seaweed soup for Ryan.
Since it is a rainy day, we just stay at home after dinner. That 's how we spent our Saturday night.....

Our best time in Medan

Last month, we went back to Medan for almost a month (from 11Nov-9Dec 2012). Ryan was so happy and the first thing strike his mind after we reached Medan was going to TimeZone at Sun Plaza to play arcade games. I believe most kids like to play game in arcade and Ryan was hooked to car racing game.However, I restricted him only to play less than 3x per visit ... or else, I will have to spent lot of $$ on his arcade game.

Our usual hang out places in Medan are either Sun Plaza or Cambridge.For me, I prefer to go Sun Plaza, at least more shops around and have more things to see and eat. As for Cambridge, normally I will only go there for the Haagen - Dazs ice cream , have my family dinner at the Grand Duck King Restaurant or let Ryan play at the Chimmon (of course, Ryan will play with his car racing game again...).

My All-Time Favourite Noodle

Since I was young, I love to eat Indomie Instant Noodle.I should say...during my primary school time, everytime after school....I sure will ask for a bowl of Instant Noodle from my mom ..it lasted for few years till one day, I feel "bored" of it, I stopped eating instant noodle for a few years then.
But now, .... everytime when I feel hungry and nothing else to eat.....instant noodle will come to rescue me.
Indomie has been one of my favourite instant noodle, last time they don't have much variety,but nowadays, this company has made so many varieties of instant noodle in the market.
On my recent trip back to Medan, I spotted this " Fried Curly Noodle with corned beef" while doing my grocery shopping at local supermarket. Grab a few packs and gave it a try the next day.
 
Taste so good....even my hubby love it so much.

Hubby's birthday

*I supposed to make this post yesterday,but due to the internet line was done..I have to postpone till tonight*

Yesterday was a special day....12-12-12 and it was my hubby's birthday. I bought him a birthday cake and cooked some simple dishes for our dinner. As part of traditional practice, chicken soup meesuah is a must for celebrating birthday.

Ryan was the "happiest boy" when I told him we were getting a birthday cake for daddy. Ryan loved to eat cakes.
After dinner, Ryan waited anxiously for the birthday cake to come...since we were still quite full, I decided to have the cake cutting session around 8.30pm.
Ryan and I sang a birthday song together followed by photo taking session....A very simple celebration!!

From my kitchen...."Steamed Cream Cracker Cake"

Steamed Cream Cracker Cake has always been my family favourite cake, it is best to served as breakfast or tea break. Let's me share with you this simple recipe....

Ingredients:

1.Sliced some carrots ,1 big onion, 1 can of luncheon meat and some leeks into small pieces.
2.Seasoning : pepper,Maggi Cukup Rasa
3.1 pack of cream cracker biscuit (I used Tiger Brand - the best is to use Jacob brand).
4.1 tin of Evaporated milk(any brand will do).
5.8-10 eggs (depend on the size of the egg).

Method:

1.Grease the baking tray(square size) with some butter ( that is to prevent the cake stick to the tray - easier to wash the tray).

I need 9 pcs of cream cracker biscuit per layer.You can use smaller size of baking tray,but must be in Square Size.

2.Stir fried the carrots,leeks,big onions + luncheon meat.Add the seasoning too. Then put aside.

3.Beat the eggs,add in Evaporated Milk and mixed them well.

4.Soak the cream cracker biscuits into the step (3).

5.Layer the cream cracker biscuits into the baking tray (3x3).

6.Put in the mixed carrot+leek+luncheon meat+onion (from step-2)in the next layer.

7.Repeat till all the ingredients are used up.It will looks like a layer cake.

8.Steam high heat for about half an hour/till cooked. Served with Maggi Sos Tomat or Maggi Sos Chili.

 My family love all the dishes I cook using Maggi products.For stir-frying/marinade, I love to use Maggi Sos Tiram to make the dishes taste great.....MAGGI is always the  best companion in my cooking.
